Chia pudding is a fantastic breakfast or snack any time of the day. Chia seeds are packed with nutrients, are very beneficial for your digestive system and keep you feeling full and energized for a long time after eating. Chia pudding is an easily customizable dish, in this recipe we add blueberries, matcha (of course) and fresh mint, then sweetened with honey and add a bit of vanilla extract for flavor too. Other things often added are flax seeds, oats, almonds and other nuts and a whole bunch of fruits. Bananas and mixed berries (strawberries, raspberries, blackberries and blueberries) are always a great combo for chia pudding.

This recipe is super easy to whip together. You'll need to let the chia seeds and milk set and gel up in the refrigerator for at least 20 minutes. If you want to get the base ready overnight and ad the rest in the morning for your breakfast that is also fine, the chia and milk base can sit covered in the refrigerator overnight with no issues and won't get any more "gelled" than after the first 20 minutes or so.
