These Matcha Cacao Chip Protein Cookies are soft, chewy and overall just downright delicious. These definitely one of the favorite snacks in our household. They nice and fluffy with and almost cake-like moistness to them. And with a little extra protein added into the cookies plus the antioxidants of cacao and matcha and the L-theanine of matcha, you don't need to feel too guilty grabbing these for a mid-day snack.Recipe
Ingredients:
- 115 grams (8 tablespoons) of unsalted butter
- 1/2 a cup white sugar
- 1/4 cup brown sugar
- 1 1/4 cup all purpose flour
- 1/4 cup vanilla whey protein
- 1 teaspoon vanilla extract
- 1 egg
- 2 tablespoons matcha
- 1/2 teaspoon baking soda
- 1/4 teaspoon of salt
- 80g 70-80% cacao bar chopped
Ā Instructions:
Step 1:Ā
Preheat oven to 350F (175C) and line a baking sheet with parchment paper
Step 2:
Cream together butter, white sugar and brown sugar in a large mixing bowl until smooth
Step 3:
Add egg and vanilla to creamed butter and sugar, mix until combined. Avoid over mixing which could stiffen the egg.
Step 4:
In a separate bowl, mix together dry ingredients (flour, whey protein powder, baking soda, salt and matcha)
We used Swisse Vanilla Whey Protein Powder for this
Step 5:
Add dry ingredients to the wet ingredients mixture and mix until fully combined
Step 6:
Chop about 80 grams of cacao and fold into the dough
Step 7:
Use a tablespoon to create balls of dough about 1-1.5 inches in diameter and place on the baking sheet with about 2 inches separation between each ball
Step 8:
Bake for 12 minutes
Step 9:
Remove from oven and cool on the sheet for about 5 minutes before removing the cookies from the sheet and placing them on a cooling rack
