This matcha banana bread goes perfectly with our Coconut Matcha Latte for dessert or an afternoon snack.

The best thing to do with bananas that are getting a bit over-rippened is to make banana bread. The best way to make banana bread even better than it already is, is to add Matcha! This recipe uses 3 ripened bananas, premium culinary grade matcha and coconut milk powder. Using coconut milk powder is a great trick in baking in order to help your recipe result in a moist, soft, delicious dessert.
In this Matcha Banana Bread we used a 70% cacao bar chopped into chunks but you can mix in pretty much anything you want, chocolate chips, almonds, etc. Next time, we might try to mix in some poppie seeds or chia seeds too.The result, of course, pairs perfectly with a Matcha Latte. It's moist and delicious enough on it's own to be served plain but you can also smear it with some honey or cream cheese if you want!

Recipe

Ingredients:
  • 115 grams (8 tablespoons) of unsalted butter at room temperature
  • 1 cup granulated white sugar
  • 2 large eggs
  • 1 3/4 cup all purpose flour
  • 1/4 cup coconut milk powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons matcha
  • 1 teaspoon baking soda
  • 1 teaspoon of salt
  • 1 teaspoon baking powder
  • 3 ripe bananas
  • 1 tablespoon milk
  • 100g 70-80% cacao bar chopped

Instructions:

Step 1:

Preheat oven to 325F (~160C) and butter a 9"x3"x5" loaf pan

Step 2:

Cream together butter and white sugar in a large mixing bowl until smooth

Step 3:

Add one egg at a time to the creamed butter and sugar mixture, mixing each until fully incorporated

Step 4:

In a separate bowl, mash the three bananas

Step 5:

Add the milk, vanilla and cinnamon to the bananas, mix until fully incorporated

Step 6:

In a third bowl, mix together all of the remaining dry ingredients (flour, coconut powder, matcha, baking soda, baking powder, salt)

Step 7:

Add the mashed banana mixture to the creamed butter and sugar and mix until fully combined

Step 8:

Add the dry ingredients mixture, mix until fully combined

Step 9:

Chop up whatever it is you wish to mix in to your matcha banana bread. We used 70% cacao but you can add or substitute almonds, coconut chips, chocolate chips, etc.

Step 10:

Fold in your add-ins

Step 11:

Bake at 325F (160C) for 1 hour to 1 hour and 15 minutes

Step 12:

Test your banana bread by sticking a toothpick into it. If the toothpick comes out clean, your bread is done baking. Remove it from the oven and let it cool for about fifteen minutes in the loaf pan before removing to a cooling rack.
