This Hojicha Zucchini Bread is Be Tea Company's first Hojicha recipe for our website and it definitely serves as an awesome start to a Hojicha baking journey. If you have never baked with Hojicha you are missing out on a wonderful, toasty, nutty flavor which makes for unique and delicious baked treats.

What is Hojicha? Hojicha is roasted green tea from Japan. It can come as loose leaf or as a powder, similar to matcha, which is what we use in baking as well as making lattes. The roasting process gives Hojicha a warm, toasted and almost nutty flavor similar to some coffees. As a drink, its low caffeine makes it a great afternoon drink for those who may be more sensitive to caffeine, and it baking it's extremely versatile and can be used similar to cocoa powder, though in lower quantities thanks to its strong, bold flavor.

Our Hojicha Zucchini Bread uses the perfect amount of Hojicha to fully experience the beauty of the roasted green tea flavor while also incorporating coconut milk powder to result in an extremely most loaf of zucchini bread.

Recipe

Ingredients:

  • 3 tablespoons granulated white sugar
  • 1/2 cup packed dark brown sugar
  • 1/4 cup (56 grams) melted butter
  • 2 tablespoons honey
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 2 tablespoons coconut oil
  • 2 tablespoons olive oil
  • 1 1/2 cups shredded zucchini
  • 1 cup all-purpose flour
  • 3 tablespoons coconut milk powder
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons Hojicha powder
  • 1 cup chopped dark chocolate

Instructions:

 

Step 1:
Preheat oven to 350F (175C) and grease a 9x5 loaf pan with oil or butter.
Step 2:
In a large mixing bowl, mix melted butter, brown sugar, white sugar, honey until fully mixed.
Step 3:
Add vanilla, egg, coconut oil and olive oil to the butter and sugar and mix until fully incorporated.
Step 4:
In a separate, medium-sized mixing bowl mix flour, hojicha, baking soda, baking powder, salt and coconut milk powder until evenly mixed.
Step 5:
Mix shredded zucchini into the wet mixture (butter, oil, etc) until the zucchini is fully covered with the mixture.
Step 6:
Add dry ingredients mixture to the the mixture with the zucchini, mix until fully combined.
Step 7:
Mix in chopped dark chocolate to the mixture.
Step 8:
Pour the mixture into the greased loaf pan.
Step 9:
Bake for about 50 minutes. Check the loaf by sticking a toothpick into the loaf. If the toothpick comes out clean, the loaf is finished.
Step 10:
Remove from oven and let the loaf cool in the pan for 20-30 minutes before removing and slicing.
