No baking required, these Matcha Granola Protein Bars are super easy to make quickly and they're healthy and tasty. These bars make for a perfect quick, on-the-go breakfast during your busy week or a healthy snack any time of the day.
These granola bars have become a household favorite which is fantastic not only because they're so easy to make but they are a healthy alternative to cookies, brownies, etc. They fill the same craving you might get for those more sugary, less healthy snacks and a packed with protein and antioxidants thanks to the matcha and cacao. The chia seeds in this recipe are also a great addition for omega 3s, fiber, and helping you feel full longer than your average granola bar.

We use gluten-free rolled oats when we make them but you could use quick oats if that is what you have available. Also, the honey is important to "glue" everything together but can be substituted 1:1 with maple syrup or agave. Substituting these in would give you vegan matcha granola protein bars (assuming your protein powder is plant based of course).
Another thing to note is that, while we use a mix of peanut butter and almond butter in this recipe, you could mix that up with any nut butters you want or use 1/2 cup of a single nut butter rather than 1/4 cup each of 2 different nut butters.
The matcha-infused dark chocolate drizzle on-top is optional but, a little extra cacao flavor and makes the granola bars look just a bit fancier so we recommend you take the little bit of extra time to add that special touch.
These granola bars will keep in the refrigerator for about a week but you can wrap them and freeze them longer if you want to make bigger batches.
