This matcha chia bread goes perfectly with our Coconut Matcha Latte for your morning breakfast or afternoon snack.
Our Matcha Buckwheat Chia "Bread" is a healthy, energy-rich breakfast or mid-day snack, and with some honey on it can even make for a sweet, cake-like healthy dessert. I put "bread" in quotes here because this no-knead recipe doesn't contain any yeast like traditional bread would. Gluten-free, paleo friendly, dairy free, vegan, and packed with energy and nutrients this recipe can work great as a staple to almost anyone's diet.

Served with blueberry jam or some local honey, this makes for a great sweet breakfast to give you energy for your whole morning. Some other great toppings we like are hummus, peanut butter, and other nut butter spreads. Ultimately, this bread is moist and chewy enough thanks to the chia seeds and coconut milk to enjoy plain by itself too!

Instructions
Ingredients:
- 1/4 Cup Chia Seeds
- 1 Cup Water
- 2 1/2 Cups Buckwheat Flour
- 3 Teaspoons Baking Powder
- 1 Teaspoon Salt
- 2 Tablespoons Matcha
- 2/3 Cup Coconut Milk
- 1 Teaspoon Vanilla Extract
- 1/4 Cup Neutral Oil (grape seed oil works well)
Instructions:
Step 1:
In a medium size bowl, mix chia seeds and water. Let the mixture gelatinize for about 20 minutes.
Step 2:
Preheat oven to 180C (350F). Apply a thin layer of oil or grease to a 8"x3" (20cm x 8cm) loaf pan and line with parchment paper as shown in the picture above.
Step 3:
In a large mixing bowl mix together all dry ingredients (Buckwheat flour, baking powder, salt) until completely combined.
Step 4:
Add coconut milk, vanilla extract, chia seed jelly and oil (grape seed, sun flower, canola). Mix until just combined. Over mixing may cause your loaf to end up flat and overly dense.
*Note that you can use any oil you want but a non-neutral oil will effect the flavor.
Step 5:
Spoon the dough into your loaf pan, then bake for about 1 hour 10 minutes.
To check for doneness insert a toothpick into the loaf. When it comes out clean, your loaf is done baking.
Step 6:
After baking allow the loaf to cool completely before taking it out of the loaf pan. Then slice and serve plain or with whatever toppings you desire!
