These matcha pancakes go perfectly with our Coconut Matcha Latte for your morning breakfast or afternoon snack.
Anyone familiar with gluten free cooking knows it can be a challenge to get anything as good as the regular gluten-full thing, but these gluten free pancakes are just as good if not better than many non-gluten free recipes out there.

We use Bob's Red Mill Gluten Free All Purpose Flour in this recipe and can't recommend it highly enough. Where with other gluten free flour options you might end up with gritty, flat, almost crepe-like pancakes, these pancakes are soft and fluffy and make the perfect main course for a weekend breakfast with honey or maple syrup, mixed berries, chocolate chips, some whipped cream, get creative!
These are just as easy to make as any regular pancake recipe and won't fall apart easily when you try to flip them unlike many other gluten-free pancake recipes.
When I make these pancakes I typically use olive oil but any oil will do. Some good substitutes would be coconut oil or avocado oil.
Recipe
Ingredients:
- 1 cup plus 2 tablespoons gluten-free all purpose flour
- 1 tablespoon granulated white sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 tablespoons coconut milk powder
- 1 large egg
- 2 tablespoons matcha
- 1/2 cup of blueberries (optional)
- 1/2 teaspoon vanilla extract
- 2 tablespoons oil (olive oil, coconut oil, avocado oil, etc)
- 3/4 cups of water
Step 1:
Mix dry ingredients (gluten-free flour, sugar, baking powder, salt, coconut milk powder and matcha) in a large mixing bowl until all ingredients are fully evenly mixed.
Step 2:
Add egg to the mixture and mix in until fully incorporated.
Step 3:
Add in the water, oil and vanilla extract, mix until fully incorporated.
Step 4:
Add blueberries or any other mix-ins into the mixture if desired and gently fold in to the badder.
Step 5:
Pour 1/4 cup scoops of badder onto a lightly oiled or buttered pan on medium-high heat. Brown the pancakes on both sides.
Step 6:
Serve pancakes while warm topped with butter, honey, maple syrup or whatever you desire!
