In just a few minutes you can have a delicious personal dessert and only one mug to clean up afterward. Mug cakes have gained popularity over the past several years, and for good reason. They're quick, easy and convenient.

Recipe

Ingredients:

  • 1 tablespoon brown sugar
  • 1 tablespoon white sugar
  • 1 tablespoon coconut powder
  • 1 teaspoon matcha powder
  • 1/4 cup all purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons melted butter
  • 1 tablespoon grapeseed oil (or other neutral oil)
  • 3 tablespoons milk
  • Whatever add-ins you want (chocolate chips, white chocolate, cacao, almonds, etc).
Instructions:
Step 1:
In a mug, mix together all the dry ingredients (brown sugar, white sugar, coconut powder, matcha powder, flour, baking powder and salt)
Step 2:
Add and wet ingredients (melted butter, vanilla extract, grapeseed oil and milk) to the mug and mix until smoothStep 3:Microwave on high for 1 minute
Step 4:
Microwave on medium-high for and additional 30 seconds. Check the cake by sticking a fork or toothpick into it; if it comes out clean then your mug cake is ready to eat, if it comes out with badder on it, continue microwaving it in 15-20 second intervals on medium-high power until it's cooked.

Let the mug cake cool down for a few minutes then enjoy!
