These matcha protein pancakesĀ go perfectly with our Coconut Matcha Latte for your morning breakfast or afternoon snack.
We're always looking for ways at Be Tea Company to creatively use matcha in more ways than traditional matcha drinks, lattes, etc. These Blueberry Matcha Protein Pancakes are a hit in our households. They don't use too much sugar, half or a quarter the amount a lot of other "classic" pancake recipes, so the sugar doesn't outshine the other ingredients, especially our favorite ingredient, matcha!

Another great aspect of these pancakes is the extra protein kick with almost 8 grams of protein per pancake (we used Swisse Vanilla Whey Protein Powder in this recipe). The protein plus the antioxidants you get from the matcha and the blueberries make these pancakes something you can enjoy regularly without out the guilt and the weighed down feeling you probably get from regular pancakes.
We typically serve these with butter and a little bit of honey or maple syrup, but they would also go well with whipped cream, fruits like strawberries, blueberries, blackberries and raspberries, or jams made of any of those. Recipe
Ingredients:
- 1 1/4 cup all purpose flour
- 1 tablespoon granulated white sugar
- 3 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 large egg
- 1/4 cup whey protein powder
- 2 tablespoons culinary grade matcha
- 1/2 cup of blueberries
- 1 teaspoon vanilla extract
- 3 tablespoons melted butter
- 1 1/4 cups of milk (any milk works; skim, 2%, whole, almond, coconut, oat milk, etc.)
Step 1:
Mix dry ingredients (flour, sugar, baking powder, salt, protein powder and matcha) in a large mixing bowl until all ingredients are fully evenly mixed.
Step 2:
Add egg to the mixture and mix in until fully incorporated.
Step 3:
Add in the milk, melted butter and vanilla extract, mix until fully incorporated.
Step 4:
Add blueberries into the mixture and gently fold in to the badder.
Step 5:
Pour 1/4 cup scoops of badder onto a lightly oiled or buttered pan on medium-high heat. Brown the pancakes on both sides.
